Old Style Fish Pie
Ingredients
1lb filleted Fish (Any fish to individual taste)
2lb Mashed Potato (Made earlier, kept warm)
3oz peas
3oz sweetcorn
2oz grated cheese (Cheddar/Red Leicester)
3oz self raising flour 3
oz butter or margarine
1 1/2 pints milk
1/2 oz chopped or dried parsley
salt & pepper

Method
Put the milk, butter, flour and parsley in a saucepan and simmer on a low light, whisking continuously, until the mixture has boiled and is a smooth and creamy sauce, set aside.

Place seasoned fish evenly in an oven proof dish, scatter the peas and sweetcorn over it pour in half the sauce from the pan. Lay the mashed potatoes over the top and use a fork to smooth the surface. Sprinkle the grated cheese on top and bake for 30 minutes at 200c gas mark 5. Serve with vegetables and the remaining sauce.
