Tangy Avocado and Prawn Salad
Ingredients
2 Avocados,
1 Mango
8 cherry tomatoes, halved
6oz / 150g cooked prawns
1 heaped TBS. chopped fresh coriander
grated zest and juice of 1/2 lemon
Salt and freshly ground black pepper.

Method
Peel the mango, slice flesh off the stone and dice
Cut the cherry tomatoes in half
Mix all the ingredients together, (except the avocados)
Season.
Peel the avocados cut in half to remove the stone, then Cut into thin slices lengthways.Arrange the avocado slices onto serving plates.Pile the prawn salad on top.
Chill for 15 minutes before serving.
Serves 4, Ready in 25 minutes.
