Casserole
Ingredients
2 medium onions, chopped
2 garlic cloves, crushed.
8oz carrots, sliced.
4 sticks of celery, chopped.
1 large potato, cubed.
2 tbsp. paprika.
large tin of red kidney beans, drained.
1/2 pint vegetable stock.
3/4 pint of milk.
2 tbsp. tomato puree.
2 tbsp. cornflour.
How to Make
Fry the onions, garlic, celery, potato and paprika in butter, for five minutes. Add the beans, stock, milk and tomato puree. Bring to the boil and simmer for 20 to 30 minutes or until tender. Blend the cornflour with a little water and add to the casserole. Stir until thickened.
