Tomato and Lentil Soup 1 onion,
chopped
6oz lentils
2 cloves garlic,crushed
1 large tin of tomatoes
1½ pints chicken stock, from stock cubes
1 tablespoon parsley
Put all the ingredients except the parsley in a pan,
bring to the boil and simmer until the lentils are soft (10-15 minutes). Cool
a bit, then put everything in a blender and blend until smooth. Add the parsley.
Reheat before serving.
