Eggless Fruit Cake
1 lb self raising flour 1 lb margarine
1 lb mixed fruit
4 oz mixed peel
1 oz sweet almonds ½ pint milk
pinch of salt 1 heaped teasp bicarbonate of soda

Sieve the flour, add the salt then rub in the margarine. Add the other dry ingredients then mix well with the milk. Put the mixture into a greased cake tin and bake for 2 hours in a moderate oven (160c / regulo7)

This recipe is ideal for anyone with an egg allergy.

The ingredients and cooking time can be halved for a smaller cake.
